Peter Lee – Colefax Chocolates

The Bulletin Reports:

"Peter and his wife Lisa bought this business in 1998, helped by Peter’s degree in business no doubt. He is now producing 600 kg of gourmet chocolates each week, operating from his new premises at Haberfield.

No machinery is used in making the chocolates at all. Nine chefs are employed, and often they need to deliver the product within an hour of taking the order. The accent is definitely on "quality", with Peter supplying 300 wholesalers which include David Jones, Darrel Lea and QANTAS.

He produces a range of about 150 different chocolates, and has carried off a swag of medals from the 2000 and 2001 Easter Shows. The most outstanding accomplishment of Peter’s team, however, was the recent award of "Outstanding Specialty Business in the Inner West", which has capped a very successful few years for Colefax Chocolates.
